Fudgy Cocoa Powder Brownies

Makes 16 servings

I am obsessed with this brownie recipe. It is the perfect amount of fudginess. A good brownie should be fudgy, it should not be too sweet, and it should have that familiar crust on it. Most fudgy brownie recipes require melted chocolate but I have developed this recipe with just cocoa powder and it is just as good (and I think even better) than most fudgy recipes out there. I developed this recipe because I always have cocoa powder at home but often run out of chocolate, and I didn't want to give up having a good brownie. Give it a try, you won't regret it. Ingredients:

2 eggs

1 stick salted butter

3/4 cup granulated sugar

1/4 cup brown sugar

1/2 cup vegetable oil

2/3 cup baking cocoa

1/4 tsp salt

1/2 cup flour

1/2 tsp baking powder

1 tsp vanilla extract

Method:

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. Sieve all the dry ingredients except the cocoa powder into a bowl.

  3. Melt the butter in a saucepan. Add the oil and sugars. Add the cocoa powder and stir so that it all melts. Remove from the stovetop.

  4. Let the mixture cool for a few minutes then add the sieved flour from step1 and stir with a spatula to combine.

  5. Add the eggs and mix till you have a smooth barter.

  6. Grease a 8 x 8 brownie pan with cooking spray and line with parchment paper as well.

  7. Pour the batter in and bake for 15-20 minutes. Do not overbake. It should still be soft in the middle and stick to a testing knife, stuck in the middle.
